Will it foam?
Yes!  In fact, most of these products will foam faster than traditionally processed milk since they have a higher percentage of protein.

Why do you say it’s lower in carbohydrates?
The carbohydrates in milk are from the lactose, since we take out a portion of the lactose when we use ultra filtration, it reduces the overall carbohydrate content.

Where does the extra protein come from?
When we make our dairy by design products we concentrate the milk proteins by either UF or RO technology.  In addition, some of our formulations use additional whey, soy and other proteins. 

You said you only take out part of the lactose.
Doesn’t that mean it’s not lactose free?

Lactose is a complex sugar—the remaining lactose in our dairy by design  lactose free products is actually broken down into simple sugars (glucose and galactose), therefore converting the complex sugar (lactose).
